Saccharomyces cerevisiae

Can anyone recommend a good, entry level book that explains the basics of wine yeast? Thanks in advance

What do you want to learn, specifically? Genome? Life cycle? Nutritional requirements?
Really, you can probably get most of the info you need online.
ITB..................................but you guys knew that already, right?

Good links.
You can try Google Scholar if you want scientific papers.
You can also use Google books to skim books to see if they are what you are looking for.
Yeast books that I have seen are generally about all types of yeast, and are more in the vein of classification/genomics, etc. If you are looking for Sacc as relates to winemaking, the links above, or skimming through winemaking books is probably your best option.

For an interesting overview of wild and cultured yeasts, I think Authentic Wine: Toward Natural and Sustainable Winemaking by Jamie Goode and Sam Harrop would be good place to start. Have you read it?
