Fascinating book, highly recommended:

Good thread. My understanding - White Lightening is an Arkansas version made from Sorghum molasses, whereas original Moonshine was corn based. Now a days most bootleg is sugar liquor made from cane sugar. White dog is unaged whiskey made from grain, The NY Times had an article about that a few weeks back. Pitched it as a natural outgrowth of the home brewer/foodie trend as people take it to the next step. For a small distiller, unaged product makes financial sense because you can sell it as you make it.

You know, Archer Daniels cranks out oceans of corn based ethanol every day that’s safer, cleaner, cheaper than anything else. You could probably figure out a way to package and market it to capture this latest trend. Just saying-

But just like wines, natural yeasts really change the flavor of the end product.
That was Popcorn’s real advantage. He had cultivated a natural yeast in TN that really gave a great product.
Moonshine is made with corn only. No sugar or cane syrup or molasses.
