Château Coutet Discovered the Oldest Bottle of Bordeaux

Hello everyone! I'm Aline from Chateau Coutet in Barsac... Just wanted to clarify that the discovery of the oldest bottle was at Chateau Coutet in Saint Emilion. On our end (Barsac) -- our oldest bottle in the cellar is 1870... Cheers!

Re: ALINE BALY - Screwcaps?

Oops -- I forgot to answer the third part of that question. I do not know of anyone within the classified growths of Sauternes producing a full or half bottle with a screw cap. However, I do know of several properties within this group producing test tubes format with screw caps.

Re: ALINE BALY - Screwcaps?

We are not considering screw caps for future Coutet vintage. There are a couple of factors that are unknown to us. The one question that leaves us perplexed: what would an end-consumer/wine enthusiast/wine collectors say to a Bordeaux first growth that didn't have a cork? It is a big risk to take wi...

Hi Brian, There is are infinite possibilities when it comes to Sauternes-based sauces! In regards to wine reductions... As you mention, it can be served with sweet foods like pancakes and waffles. In addition you can use it as a syrup that you pour onto a cake right after baking, to make it nice and...

Re: Special cuvees and their effect on the rest of the wine

A great question! At Coutet this tradition is far from being modern. Check on my last post in regards to how Cuvee Madame came to be... It does not reduce the quality of the first wine. The only reason that the specific lot that can lead to a Cuvee Madame is set aside is because it is so different f...

If you've got acidity, residual sugar and alcohol -- your wine will age.

Now to age well you need to have balance between these three components.

Asian cuisine is perfect for trying sweet and savory pairings with wines from Barsac and Sauternes. I've had a lot of success with dishes that have a fried food component and involve shellfish to play on texture (both as a compliment and a contrast to the wine).
