We use one regularly at the store when we have wine tastings. I think it makes a difference...especially aromatically.

I just picked up the Nespresso Citiz with the Aeroccino, happy with the results so far. I agree with Scott that there are definitely better alternatives, but for $235, and a quick shot with no cleanup...works for me! Also, the the automatic froth that the Aeroccino makes is decent..so far, so good. ...

Quite the humbling evening for my pegging the blind wines! The Ornellaia was from California, The Aquilon was from Washington, the Remelluri was a white Rhone. Ouch.

But the Batard was singin....

Curious if you thought about a cross-hatch on the skin to help render out more fat? I have seen it both ways. Also do you tend to pour off any of the fat as you go? The lame-ass Kosher duck breasts I can get are nothing like those beauties you were playing with. Duck done right is one of my favorit...

Duck breasts from a local farmer...seared in duck fat and the finished in the oven. Served with shrooms in port reduction. Would have taken better pictures but it was my wife's birthday and I was rushing to serve and eat!

Sounds like I should try Scopetone. I have to admit, I am pretty familiar with about 30 or so Brunello producers but there are a lot that I haven't gotten to yet... Another favorite (made in a traditional style) is Le Macioche. Owned by a retired engineer, he is insistant on making Brunello the way...
