I think you would be better off trying more typical years like 08-10 to get a judge on the House style. I’ve actually loved the 11’s though as they are a bit more restrained, but it’s probably not best to purchase or dismiss the brand based on that vintage.

I also like the Arme but stylistically it’s a bit different from the crowd pleaser lushness of Substance. Another one that I used to go to was Tensley Fundamental, haven’t had the new release though.

That a big part of reason one of these would really appeal to me. It takes the steel so long to heat and then recovery time after is frustrating too.

I realize you probably weren’t talking to me Chris, but I’m actually wondering the opposite. I love the $40 - 65 range bottles and I’m wondering if I should just stick to those. I get tons of pleasure in that range and I’m not sure if these will provide immensely or proportionately more.

I’ve had some good results with 2005 and 2010. There’s a lot more structure in those years as opposed to say 07/09. Not sure about more recent years as I quit buying cdp In 2010.

If you don’t like it now then I don’t see any point in aging it. If you have tons of cellar space and want to experiment then give it 40 years and see what happens. Nobody can predict that and it’s possible that it could be incredible or go horribly wrong. A mere 10-15 years isn’t going to morph it ...

Wouldn’t a winery like López de Heredia be a comparable operation to a large scale whisk(e)y producer?

They control everything including the long term aging, very fine quality but little hype, and therefore reasonable prices for what’s in the bottle.

We actually have Kenji’s book And interestingly he doesn’t use ricotta in that version of the recipe. Instead He adds mozzarella to the béchamel. I think I might do both, because why not.

I received this packaging from a retailer the other day. It is more compact than styrofoam shipper but it had to be 5 to 8 pounds heavier? There is no way bottles are breaking in this thing with its thick heavy cardboard. Seems like a better option to me.

Ok, didn’t know this was even released yet, but there’s a shop that shows availability. I’m a little surprised at no 2010, I know it wasn’t a great year though. Has anybody tried it? I just bought 2008 and figured I had some time to save my pennies for 2012.
