Smoked boneless skinless chicken breasts were a hit - really like tenderness. They took longer than expected, but very worth it. While I used a brine, I didn't tenderize/pound them at all as I figured that would open up a lot of pores which would just soak up smoke

Popped one last night. I was only able to give it 30 minutes in the decanter. It wasn't a particularly good showing based on praise above (this was my first)...perhaps a dumb phase is showing up. Todd, how long did you have the hangers on your smoker for? For steaks (predominantly NY and ribeye, with an occasional Denver cut if I find a nicely well marbled piece), I use my Traeger as a reverse sear. I bought some of the whites (non-Clos) from Envoyer and he ran out, swapped with a red (of ‘12 and ‘13), and since I wasn’t impressed with the white, I now look forward to the reds!

I've been drinking a case of 2005 Lanessan and could expect the wine to last another 3-5 years easily, possibly another 10. 2010 and 2005 are similar vintages, so I think you have plenty of time, IMHO
