Re: Languedoc

Disclaimer: I represent a few Languedoc wineries, so take my comments for what they're worth. Melissa, there's no one dominant grape, it's a real mish-mash of the traditional (Picpoul, Mauzac, and Rhone varieties) and the modern (Cab, Merlot, other international grapes). The area is still somewhat o...

Re: Does anyone in CA/OR/WA co-ferment?

Carole Meredith has posted how adding a white grape like vioginer to syrah actually makes the wine darker.... This phenomenon is known as co-pigmentation: http://www.ajevonline.org/cgi/content/abstract/52/2/67" onclick="window.open(this.href);return false; Thanks for the link, I'd heard that but co...

Re: Does anyone in CA/OR/WA co-ferment?

I'd love to see that winery try to get that THC-laced wine past the TTB. Now THAT would be hilarious. [rofl.gif] I think I recall hearing that some folks in the Northern Rhone co-ferment Viognier into their Syrah but most do the assemblage post-fermentation. Pretty cool discussion, thanks folks! 8-)

Re: Does anyone in CA/OR/WA co-ferment?

Hey everyone, Thanks so much for your responses! I'll have to look for that Edmunds St John bottling, that sounds interesting. In my winemaker's case, it's all from biodynamically-farmed vineyards that are hand-harvested. As you say, timing is important, but most of the stuff comes in at the same ti...

Re: Does anyone in CA/OR/WA co-ferment?

Mary,

No, I was just curious if this was a common practice. Most of the blends in the portfolio are post-fermentation assemblages, I didn't know if others (especially in the New World) co-fermented and if it was a common method.
Cheers! [gen_fro.gif]

Does anyone in CA/OR/WA co-ferment?

I have a winemaker in the Rhone (Montfaucon, info HERE and HERE ) who co-ferments his basic red, Les Gardettes. It's a mix of Syrah, Cinsault, Carignan and Mourvedre, all fermented together in cement. The result is what I think is a complex bottle of wine that retails for about $10. Then again, I am...

Mark, can't wait to meet you and all the others at FF-Part Deux. [drinks.gif] On a serious note, I like potatoes and wilted spinach as accompaniements to my steak (black & blue, of course). I make the potatoes several ways, but my favorites are tossed with duck fat, onions, herbs and garlic then roa...

Yeah, was a lot of fun and a real eye-opener. That NV Pierre Moncuit Cuvee Delos is real special juice at a great price.

1985 Veuve Clicquot Ponsardin Champagne Brut Rosé Rare - France, Champagne (11/8/2008) I thought this was a pretty remarkable bottle of wine. Exotic and alluring aromas of gingerbread, sugarcane, toffee, strawberries, and toast. Rich yet balanced on the palate with luxuriant notes of lemon rind, ca...

Tuesday Night Vinos

A friend and I decided to have our monthly meeting of the minds and palates at a little neighborhood place with an amazing wine list. Why? Because it was Tuesday, of course. The food was absolutely spot-on fantastic. As we sat down, a glass of NV Pierre Peters Blanc de Blancs was proffered. Not to b...
