Just needs to be 80% Sangiovese. Can have 20% other varietals and I believe Cab and Merlot are allowed as part of that 20%.
75% is the law, max 10% Canaiolo, 20% others including Cab and Merlot.

Yes, it is very unfortunate and sad but indeed a few French varieties are included in the DOCG. Very often they manage to bring unwelcome ripeness and plushness to what could otherwise be delightfully savory and refreshing wine.
