St. Patty’s Day Pairings - thoughts?

While I will have Guinness, Irish whisky and perhaps some boozy shamrock shakes available, what WINE should I pair with Wagyu corned brisket and cabbage-potato colcannon?

Riesling

Acid to cut through the fat? Going to be bubbles for us!

Beaujolais Cru I’d say. Morgon or Moulin à Vent if you prefer something more substantial; but I’d go for a Fleurie by Métras.

+1 I’d say make it Alsatian seeing as your food choice in essence resembles choucroute garnie.

We had Spiders From Mars Syrah with one apple cider crock pot corned beef and one smoked.

Held up very well!

I like to pair corned beef with non-corned beef. I let other people eat the former while I enjoy the latter.

So we did dinner the night before - Corned wagyu brisket and colcannon.

Started with a mag of Ployez-Jacquemart Rose extra brut. Then a few whites - Dirty&Rowdy&Cruse Furmint and an Eric Kent chard. Then two Irish reds: 2008 and 2010 Keating Beckstoffer G3 cabs. Tyrconnel 10yr Madeira cask aged to finish things off.

Thanks to all for recs! The furmint was appropriately acidic to balance the Wagyu, but everything seemed to be appreciated just fine.
