2005 Hospices de Beaune Pommard Cuvée Dames de la Charité - France, Burgundy, Côte de Beaune, Pommard (11/12/2019)

This was decanted a little bit in advance, but still needed more time to get past a grumpy phase. It was a delicious match with the black cod with mushrooms entree. Initially it had a funky, cabbage-like aroma that covered up more interesting elements. On the palate the cabbage thing was not apparent, and the red fruit, dried leaf and earth, as well as some oak came through without a veil. The more time went on, the more the cabbage note dissipated, allowing the fruit and forest floor tones to come forward. It ultimately showed very well with the cheese course.
