TN: 2001 Lafaurie-Peyraguey Sauternes

Enjoyed the '01 Lafaurie-Peyraguey after dinner yesterday. Opened and poured. Dark gold color, nose had apricot, vanilla mousse(?), and also honey and some spice. Sweet but in terrific balance backbone with more than enough acid. Finish added more spice and was long. A tasty bottle.

Day two - Starting back in on the last half of the bottle. Similar as before but maybe vanilla is a little more pronounced. Now pairing with some blue cheese and it is excellent. Will definitely pair it with some pungent cheese next bottle.

I drank a lot of 375ml bottles just after release and as best I recollect this 750ml was similar to those. A very long life ahead of it.
