Vaccu-vin pump-out fruit blast

I often use a vaccu-vin to close out a bottle after consuming half. When I pump the vacuum device, there is often a blast of concentrated fruit, that often helps clarify the fruit i was getting while drinking. At times, though, there are surprises. Tonight I had a nice 2007 Pavelot Daminodes. While pumping out, I got a blast of red fruit, but also a prominent blast of watermelon that I never got while drinking. Going back to the wine in the glass, it’s certainly there, but I’m not sure I would have ever noted it. Anyone else having this experience?
