    Starts out very linear when first opened, almost to the point of austerity. Thirty minutes later there’s a greater sense of fruit, mostly in the apple and lemon range. It remains focused and mineral, but fans out on the finish to gain more depth. Never goes fat, always stays clear. If Pépière’s Clisson was a California Chardonnay it would be this wine.

There’s definitely more richness on the finish as time goes on, but never heaviness. It just persists longer and longer as it get more air.

This is always such a great wine.
