Sparkling wine texts?

Any recommendations for production guides? I’m dipping my toe in the sparkling pool this year, and as I start to contemplate going from base wine to bottling, I realize there are some holes in my half-assed education. So, I’m looking for a nuts and bolts reference for things like SO2 targets, the timing of tirage, bottle fill heights, etc. Anything good out there?

I see that no one ever responded to this question, and I think that’s likely due to the fact it’s hard to find good reference material for sparkling… even the good general winemaking texts tend to just have a few pages devoted to the entire subject. Kind of strange, considering that it is one of the more technical styles of wine to produce. My recommendation would be Bruce Zoecklein’s compilation of information found here:
