SPAGHETTI alla NERANO

Spaghetti alla Nerano is a dish that was born on the Sorrentine Peninsula. It is believed to be the invention of a lady called Maria Grazia, the proprietor of Ristorante Maria Grazia down at Marina del Cantone which overlooks the beach below Nerano just a few kilometres south of Sorrento out along the peninsula. Ristorante Maria Grazia started up in 1901 and the owners claim to have invented Spaghetti alla Nerano at the beginning of the 1950s.

I made this today but from the Chewing the Fat website. It was excellent. I got zucchini at the farmers market. Guy said they were “Mexican Zucchini”. They were small and had almost no seeds.

Made this tonight. My wife and I loved it but my 16 year old son prefers a sauce made of pureed asparagus stems, olive oil, and lemon that I also make that comes from a cookbook called Red, White, and Greens.
