This cold soup is a classic from the Baltic states. This recipe has a little twist by adding a bit of apple. Of course not traditional. But traditional is to serve it with boiled potatoes. Fair to say in summer time I don’t need potatoes. Bottom-line, a very refreshing and down-to-earth dish.
