Roasted Chicken Provençal

Jerry Hey clued me in to this fabulous recipe. I used bone in skin on thighs, added more shallots and lemon and a little fennel seed. Made a big batch and it reheats just fine. Really good recipe, a keeper.

Yes it is an easy but very tasty recipe and there is no browning of the chicken. And it’s a one roasting pan dish. And some par boiled potatoes half way through the cooking time and you’re in business.
