POINTED CABBAGE SALAD

I made this side dish yesterday solo as an experiment and it turned out nicely. A simple&sublime side dish for fatty meat. I will serve it later in the week with the famous Saumagen from the Pfalz region incl. mustard, as I have canned Saumagen. Certainly also a good partner with the german Bulette.

By Pointed Cabbage I assume you’re referring to what we call Caraflex Cabbage in the US? I ADORE this cabbage!!! Whenever I find it, I buy it and eat it as the base of my salad until it’s all gone.

Interesting, the first time that I read the term Caraflex Cabbage. It seems that there are different names in Britain and America. Anyway in combination with walnut oil or hazelnut oil this vegetable shows a lot of finesse.


P.S. As I ruined a kitchen towel for pressing out the water from the Caraflex Cabbage, maybe a salad spinner is the right tool for it.

Down South we call that a pointy-head cabbage :slight_smile:.
