Next Tuesday is ISVD.

Lots of online events, demonstrations etc. for those interested.

My sous vide had sat on the shelf for months, but I’ve recently been using it again. I forgot simple things like perfect eggs, tasty carrots, melting short ribs etc.

I’m kind of lukewarm about sous vide…

Ruhlmann didn’t fare well doing foie gras that way.
