FALAFEL

Spring is here! 24 C on the countryside yesterday. Time for Falafel.


Ingredients

250g dry chickpeas
cold water

1 onion, chopped
2 cloves garlic, crushed
1 organic lemon, peel + dash
1-2 bunch flat parsley (depending on size)
2 tbsp heaped flour
1/2 tsp bicarbonate of soda or baking powder
1 tsp grounded cumin
1 tsp grounded coriander
1/2 tsp chilli (or less)
1 tsp salt
sunflower/rapeseed/ground-nut oil for frying

optional: grounded cinnamon


Dip:

250g plain yoghurt
3 tbsp Tahini
1 clove garlic, crushed
1/2 lemon juice
2 tbsp mint, chopped
salt&pepper

optional: add cold water



Preparation

  1. Soak the chickpeas in cold water overnight

  1. Drain the chickpeas and put chickpeas and rest of the ingredients in a blender. Add a dash of lemon juice to the bicarbonate of soda, so that you activate it. Mix

  1. Let it rest for 30min or longer

  1. Meanwhile make the dip. Combine all ingredients in a bowl

  1. Use an ice cream scoop to make falafel scoops

  1. Deep-fry them for 5-6min by 170C

  1. Serve the Falafel with the Tahini dip, also add a tomato salad, pickles and pita bread. ENJOY

Yes, I read that fava beans are even better than the classic chickpeas for Falafel.

One thing I like to do when making falafel is use a meat grinder instead of a blender. I prefer the texture.

I finally made it today, with minor adjustments. I did not have parsley, so I a grabbed a lot of fresh Basil from the garden. My food processor sucks and I am replacing it, so I used the grinder attachment for the Kitchen Aid, which was perfect. I put everything through the grinder, which creates a consistent size tiny piece. I just noticed that TimF made the same suggestion. I even ground up the Basil stems. I left out the chili because my wife hates it. The whole thing was easy, fast and it came out great. I had no idea how easy it was to make. I will have to add it to the vegan course at my next big dinner.

AND it presents some interesting mashup ideas. I love corn dogs as the most disgusting state fair food. How about Falafel Dogs? Or Falafel Nuggets using mini hot dogs. A PERFECT tailgate appetizer!
