Here comes an easy-peasy dish for working week. I was in the mood for a veggie dish, as I had a lot of meat last week-end. First I wanted to make a Munster-Rösti which I made already a couple of months ago, but my favorite high quality Munster cheese is not around the corner, so I decided to use Feta cheese instead from my Turkish shop nearby.
Ingredients
1 kg wayx potatoes
150-200g Feta cheese
1 red onion, thinly sliced
Thyme leaves
30g butter
Olive oil
Preparation
- First grate the potatoes
- Put half of the butter and a dash of olive oil to a non-stick or iron pan on medium heat. Then add half of the grated potatoes
- Add salt&pepper and slices of onion
- Add stripes or crumbled feta cheese
- Add fresh thyme leaves
- Now add rest of the grated potatoes
- Use a spatula to bring it in form. After around 5min add a lid and cook for another 5-10min on low heat
- After 10-15min flip it to a plate
- Add rest of the butter to the pan and a dash of olive oil. Bring back to the pan. Heat up to medium heat without lid and cook for 5min.
- After 5min add lid and reduce heat to low heat for another 5-10min.
- Serve it solo or with a salad. ENJOY
