SWISS SAUSAGE SALAD

It’s summer today in Berlin with 28 C, time for a Biergarten dish. Schweizer Wurstsalat is a classic dish in south Germany, mostly served outside. And of course also a classic summer dish at casa zwick. Most of you know this dish already, but a classic never get old.

Pre-cooked&lightly smoked sausage is used, like Regensburger, Krakauer or Lyoner. Use a high-quality Mortadella instead. Most importantly before you serve, put it in the fridge for 2-3h, it’s really essential.

Optional you could also add some radish or even 1-2 tsp mustard if you like.



Ingredients

350g pre-cooked sausage (Lyoner, Regensburger, Krakauer, Mortadella)

220g Swiss Emmentaler cheese

100-150g gherkins/cornichons (dill variety), cubed

1 red onion, stripes

5-6 tbsp gherkin water

5-6 tbsp white vinegar

5-6 tbsp sunflower oil

chives




Preparation

  1. Remove the skin from the sausage and chopp it in stripes. Put in a salad bowl.

  1. Chopp the cheese in stripes and add to the sausage.

  1. Add the chopped onion stripes to the salad bowl

  1. Now add the cubed gherkins.

  1. Add salt&pepper and gherkin water, white vinegar and sunflower oil to the salad. Combine everything and put in the fridge for 2-3h.

  1. Finally add chopped chives on top. Serve with a baguette, bread or even better with a Bavarian pretzel. ENJOY

Could you please clarify what you mean by gherkins? Sweet or the dill variety.

I recommend the dill variety. I used a tarragon variety from France which is hard to find.

Yes, Cornichons. I had some leftover of the Salad yesterday and I added some german big gherkins (dill variety), worked too.

Mmm, Schweizer Wurstsalat, yummy! (Not really any salad in that salad though.)

P.S.

It‘s called Swiss Sausage Salad because of the Swiss Emmentaler cheese. There are versions without cheese then it is called Sausage Salad.
