GAZPACHO

UPDATE due to events in Washington. hahaha

It’s hot in Berlin and on the countryside with 35-36 C or 95F. Hottest 19. June in Germany ever. Time for a Gazpacho. Fair to say its not completely like the original version, as I made some adaptions which suits me better. No sherry vinegar, no white bread, no green pepper and I also don’t sieve the soup before serving. Also I don’t add some little cubes of pepper, cucumber etc. on top, this suits restaurants better. For me more important is that it is cold, delicious and enough liquid consumption for a very hot summer day.

Optional you can add more vinegar and water.

Ingredients

1,2kg tomatoes (from Sicily)
1 organic cucumber
3 cloves garlic
1 organic red pepper
1 onion
1 red chilli
100-150ml olive oil
3-4 tbsp vinegar
1 tsp sugar
1-2 tsp salt
300-400ml water

I’m embarrassed to admit it but this was the first time I ever made gazpacho. It was wonderful

Thank you Martin!

Quelle surprise, Jay.

I make it each summer a few times. The best dish to deal with temperatures around 33-40 C

Fair to say much depends on the quality of the tomatoes. I use Datterini tomatoes from Sicily.

I used local farmers market tomatoes (and red pepper and cucumber and garlic) being sure to taste before putting them in the blender. We were both sitting there drinking it and saying “I should have been making this all summer”.

Gazpacho on a hot day is always great. I favour the Córdoban version, salmorejo.

I could drink gallons of gazpacho in summer time. Love it!

I guess you want to know more about GAZPACHO… [wink.gif]

Also a great dish for the upcoming SUPERBOWL, if you’re living in California.
