We’re hoping for a visit to Bavaria and Austria next summer. I have not kept up with the language so I need to start studying.

This is great, thanks! I was talking with the girl selling kohlrabi at the market this morning. She said she usually cuts it up into fries and bakes it. When I told her your method her eyes got really big.

haha…interesting, she cuts them into fries and bakes them. Now my eyes go big. haha

Never seen before this method regarding Kohlrabi.

We stayed at a B&B one time, and the owner would grate kohlrabi, then dress it with olive oil, salt & pepper, and just eat it like that.

Did you like it? Most people I talk to have only had it raw. My sister stopped growing it because she didn’t like it. She was surprised when I mentioned cooking it. I think a lot of people treat it like a radish.

My grandmother used to blanch it, and then serve it with a butter sauce. That’s how I learned to eat it.

I will make thick sticks and quick pickle them. I was not a big fan of the olive oil treatment.

Be careful, Kohlrabi is not like radish. Huge difference!

Radish you could could eat raw, but not Kohlrabi.

You absolutely can eat Kohlrabi raw, as David Bueker discovered at that B&B. Yotam Ottolenghi has lots of recipes for it, uncooked, in salads, which I like.

Thanks Martin. I believe I have mentioned my in-laws are both German (Leipzig & Donauschwaben) so many of these are familiar, even if slightly different.

Okay, as you&David like raw Kohlrabi and Ottolenghi published such many raw Kohlrabi recipes then it has to be good.

Yesterday I watched Stanley Tucci eating big chunks of beefsteak Florentina raw and I said NO NO NO. haha

Fair to say I am quite skeptical/hesitant eating all kind of food RAW. It looks like its a personal thing.

potato salad

My wife makes German potato salad every once in a while. She uses too much vinegar IMHO. When I take a whiff of it, I always cough.

Show her my recipe. And important is also that you add the broth first and let it rest, then the rest like I wrote. It also helps that she uses a smooth vinegar, for example White Balsamico from GIUSTI or a high-quality apple vinegar. Last but not least, a potato salad has to be juicy or what we call s_chlonzig_ in the south-german language.

P.S. in the old times the bride had to show her mother-in-law how good she makes a potato salad for her future husband in the deep south of Germany. To make a good potato salad was one of the most important thing in a marriage. So, no room for mistakes. For example the slices of the potato had to be very thin.

Bottom-line, potato salad is a serious thing.
