I had no time for shopping, but the perfect housewife is prepared and has something in the freezer on the countryside. In this case Iberico filet. I combined it with an Aceto Balsamico “Il denso” by GIUSTI. BTW, in “Searching for Italy” by Stanley Tucci you see an Aceto Balsamico tasting at Giusti. Very tasty this dish.
Ingredients
500-700g Iberico pork filet
150-200ml red wine
50ml aceto balsamico
dash veal stock/demi glace
1 sprig rosemary
3 tsp dijon mustard
1-2 tbsp allspice
1-2 tbsp aceto balsamico
Preparation

- Put 1-2 tbsp Aceto Balsamico to the pork filet.
- Crush the allspice in a mortar or spice grinder. Add the spice to the pork.
- Finally add mustard to he pork
- Add clingfilm and put in the fridge for a few hours or better overnight
- Then clean the pork with cold water and remove the marinade. Use kitchen paper to make it dry
- Cook the pork on both sides for 2-3min in a big sauteuse or frying pan. Pre-heat the oven to 80 C
- Add 100-500ml red wine
- Also add 50ml Aceto Balsamico and chopped fresh rosemary. Brush the meat with the sauce and cook for 10-12min
- Remove the meat and put in the oven for 10-15min.
- Reduce the sauce and add a dash of veal stock or 1 tbsp veal demi-glace with a dash of water. Optional also add a dash more red wine.
- Slice the meat and add the sauce. Optional you can sieve the sauce before serving. ENJOY
