Dirty Rice Recipe from Chef Issac Toups

My wife is from New Orleans and that’s where we met and spent a good bit of our life. Toups Meatery is one of our favorite restaurants in town and we’re big fans of Chef Toups. We had an impromptu holiday gathering with some friends this past week and decided to kick things up a notch and do some dishes inspired by our hometown. The menu was the following:

New Orleans Bbq Shrimp over toasted french bread
Stuffed Pork Tenderloin with Cherry and Chiplote sauce
Dirty Rice
Collard Greens

Dessert was griddled wine cake with Banana’s Foster and fresh whipped cream. Awesome dinner that everyone loved. The Dirty Rice was a big hit and we followed this recipe. We doubled the stock and skipped the beer. Highly recommend this recipe for anytime and great for the holidays.

Good article.
I’ve put the recipe aside, not sure when i’ll get to it.
Ran across Issac on an amusing (I thought) Eater YouTube video recently…
