I had some beef leftover from Xmas in the freezer, unfortunately only 300g . So, I made this most famous east-european dish which was on my to-cook-list since a few years. Unfortunately my beef broth is in the freezer on the countryside, so I had to made it with water. But I recommend broth. Anyway it’s also delicious with water. Of course you could change the quantities, use more beef or water/broth or more beetroot for example. Or add other vegetables. I assume there exist a lot of variations of this soup in East-Europe.


Ingredients

300g stew beef (500g is certainly better)

2l water/broth. (broth would be perfect)

300g-400g beetroots, julienned

300g cabbage, thinly sliced

300g carrots, julienned

300g potatoes, chunks

1 onion

2 bay leaves

1 tbsp tomato pure or 3-4 tbsp tomato passata o

1 tbsp vinegar

1 tbsp sugar

dill/parsley

sour cream




Preparation

  1. Add meat chunks to a Dutch oven/Casserole and add cold until just covered. Heat it.

2. When it’s bubbling and there is some grey foam, remove the meat and skip away the water. Clean the meat with warm water.

3. Bring meat back to the Dutch oven/Casserole and add 2l water. Also add 1 onion and 2 bay leaves. Cook it on high heat until bubbling, then reduce the heat and let it simmer for 2h on low heat with lid.

4. 20min before the end of the meat-cooking add beetroot-juliennes to a pot with butter/oil and cook for 10-15min on low to medium heat. Optional add some broth, if it is too dry. Add vinegar, tomato pure/passata and sugar.

5. Then add carrot-juliennes and cook for another 10min.

6. After 2h remove meat and chop it. Add thinly closed cabbage and roughly chopped potato chunks. Cook for 15min. with lid.

7. Also add cooked beetroot&carrot to the pot.

8. Then add chopped meat and let it cook for 5-10min or longer

9. Serve with sour cream and dill or parsley. ENJOY
