Here’s my lunch today
White bean pizza with caramelized onions, goat cheese & sage
I fudged up the uncooked crust moving it onto the wood peel
so no full shot of the pie.
The base sauce was cannellini (from dry beans) processed thru a food mill
and then seasoned with S&P
I use a canon powershot sd850 is (just a point and shoot)
set to M (not really manual but I can do exposure compensation)
and I use the “Digital Macro” setting for most close-ups
this lets me get about as close as an inch away
Mel, try what some of our local markets do. “Seam” the ribeyes by cutting out the internal fat and gristle, then tying them up as what are called - here at least - Delmonico steaks. I think I have a pic someplace and I’ll try to find it. It’s very easy to do.
I recently had the unpleasant experience of grabbing a quick dinner from a hospital cafeteria: breaded oven-baked chicken, mashed potatoes, green peas, corn bread. As I was struggling to quickly scarf down the over-cooked, bland, repulsive “food”, I pledged to make this same meal when I got home to my standards. So that’s what I did today for lunch:
Fried Chicken - Buttermilk brined, sous-vide cooked, and flash-fried
Potatoes - Mashed with rendered chicken fat/onions/gribenes
Corn Bread - Jalapeños & cotija cheese
Green peas - frozen, but at least these were still green; not grey like the ones in the cafeteria.
