Here’s my lunch today
White bean pizza with caramelized onions, goat cheese & sage

I fudged up the uncooked crust moving it onto the wood peel
so no full shot of the pie. headbang
The base sauce was cannellini (from dry beans) processed thru a food mill
and then seasoned with S&P

I tried to post some, but the forum hates me. I guess my avatar (Beluga) says enough.

Too big?
I keep mine at 800 px and they seem to upload just fine???

mel

what camera are you using for these food shots?

That’s what Zach said.

I use a canon powershot sd850 is (just a point and shoot)
set to M (not really manual but I can do exposure compensation)
and I use the “Digital Macro” setting for most close-ups
this lets me get about as close as an inch away

Wife and kids do not like ribeyes due to all the “stuff” other than meat
so I like to make kebabs from well trimmed ribeyes…

Flannery Hanger steak, marinated and grilled, maytag blue cheese spread, roma tomato, and fresh spinach.

Mousse frozen on dry ice with frozen salmon shavings, some cracked red pepper and a sprig of dill. Mmm…

Sautéed mushrooms, leeks, a little cheese on puff pastry…

Seared day boat scallops, shiitake mushrooms, spinach, soba noodles in dashi.

Mark - that looks fantastic!

Crabcakes… in duckfat!

Mel, try what some of our local markets do. “Seam” the ribeyes by cutting out the internal fat and gristle, then tying them up as what are called - here at least - Delmonico steaks. I think I have a pic someplace and I’ll try to find it. It’s very easy to do.

Here it is:

Thanks Ed. With me it’s hit and miss. Mel really has the touch.

Haha!

I recently had the unpleasant experience of grabbing a quick dinner from a hospital cafeteria: breaded oven-baked chicken, mashed potatoes, green peas, corn bread. As I was struggling to quickly scarf down the over-cooked, bland, repulsive “food”, I pledged to make this same meal when I got home to my standards. So that’s what I did today for lunch:

Fried Chicken - Buttermilk brined, sous-vide cooked, and flash-fried
Potatoes - Mashed with rendered chicken fat/onions/gribenes
Corn Bread - Jalapeños & cotija cheese
Green peas - frozen, but at least these were still green; not grey like the ones in the cafeteria.

Crabcakes anyone?

Chicken looks good Bill [welldone.gif]

Thanks Roger. Here is today’s lunch - a sandwich that brings tears to my eyes:

Focaccia - 2 day dough using wild starter culture
Seared flatiron steak
Piquillo Pepper & Shallot Jam
Aioli
Arugula

Yes, I’ll have fries with that.
