My bottom line concern is opening three bottles and having to pour part of them out because they do not hold up in the fridge for as long as it would take me to drink them. With sweet sherries that’s not an issue I’ve found. A week or two of sipping from the fridge is fine. The dry sherries I would treat as I would a dry wine. Drink within a couple days. That’s what I was getting at.

gotcha. My experience with dry Oloroso, Amontillado, and dry Palo Cortado is that they’ll hold just fine for multiple weeks. I’m currently on about week 3 with a bottle of Valdespino Amontillado and it doesn’t appear to be any worse off for it.

It’s settled then. I has been a long time since I opened three bottles on the same night…in the name of science. [drinkers.gif]
