Truett - yep…I score 2 of the 4 sides and they absolutely do catch whatever sauce you choose to put on. We have some friends who live nearby but with roots in Utah who swear by a hot dog chain in Utah called J. Dawgs and they brought us back a big squirt bottle of their Special Sauce which went quite nicely on these today. Its kind of a mix of ketchup and a sweet bbq sauce.
+100 - these are awesome and far and away my favorite dog. We had some friends over for a blind hot dog tasting with LaFrieda, Brooklyn hot dogs, snake river farms, Hebrew nats, and Niman Ranch. The KC cattle co blew everything else away. Was pretty unanimous.
Point well taken. I don’t need the richness of a wagyu dog. I want a snap dog w fixins.
Truth be told, I want a chili dog like I used to get at Texas Lunch in upstate New York. Long closed. And if those people ever find they’re way to this thread cuz they googled themselves. Find me and give me that recipe. This is a life goal of mine.
Nobody has mentioned buns. Buns matter a lot. A lot!
And far as I know, I can’t get one that doesn’t suck.
These are the best buns I have made recently. SO good! She has some other good ones that I want to try as well. I’d like to try the Dutch Crunch and Pretzel buns (although I made some sourdough soft pretzels the other day that turned out more like buns, so that’s what I’m using them for, LOL). And obviously, you can shape them for hot dogs as well.
Snake River Farms Wagyu dogs just passed the test. Noticed them at my local Citarella and gave them a shot. Good snap, good flavor and they should be quality. They are bigger than average dogs at 5 links to the lb. $13.99 a pack.
A neighbor recently gave us a package of what he called “white hot dogs” that came from Rochester NY. They were plumper than the usual hot dog, less assertive in flavor, softer to chew and very tasty. I didn’t pay attention to the packaging so I don’t have the brand name. Recommended.
