Favorite Style of Napa Cab???

Think of ripening as a bell shaped curve in terms of complexity. So you transition from under-ripe/austere/simple to a “normal” range of greatest complexity to over-ripe/jammy/simple. I’m just objecting to calling the most complex of those three vague general ranges as the simplest. If you defined austere as less than 12%, I would accept that as a generalization (and maybe point out exceptions the same way over 14% isn’t necessarily a fruit bomb).
