So the obvious next question is how long will the sliced vacuum packed hams keep? And should they be refrigerated? And can they be frozen or is that inadvisable?

Speaking as someone with very limited counter spaceā€¦

As soon as the ham is vacuum packed will keep the properties. You also can freeze it and just take out from the freezer couple hours before be eaten. If you keep it in the refrigerator, just keep an eye on it to make sure the vacuum packing is in good shape. Often the packages can lose the vacuum and ruine the content, so as soon as you see the package lost the vacuum, eat it (with wine, of course). Make sure the ham takes the room temperature before eat it, so youā€™ll get all the flavor avoiding cold temperature.

Iā€™d say that packages in the refrigerator can be in good shape for months 4-6 or even more. However, as much time more cured would be the ham as it is already sliced.
