As you have surmised, Short Pump is basically strip mall exurbs. The Peter Chang suggestion is a good one. At my local outpost, corkage is something like $15.
Just a couple miles down Route 250 from Short Pump, you can hit The Answer, which is the beer-centric back half of Vietnamese mainstay Mekong. Nationally renowned beer and cool vietnamese bar food at The Answer–an extremely fun place to visit.
Sounds like you do not have the ability to head downtown, but if you have any interest in beer at all, The Veil is an easy dash down 64 and truly one of the country’s best breweries. World-class hazy IPA.
Richmond is a great city to eat and drink in, but you pretty much have to get into Richmond.

Thanks, I had noticed the Peter Chang place as walkable from the hotel. Hadn’t even thought about corkage but will inquire.
