As a slight aside, roasting the onions till just short of burnt retains the sweetness and also decreases the chance of the final product developing an early sourness. The flavor will be just as complex, but just a little less delicate.

I have actually been to the store in Wisconsin. Real nice people there. They make the best smoked bacon.
Only thing I can find is smoked liver sausage.
Would be easy enough to hit some livers with some smoke and make homemade.

Aside from the p***ing match – isn’t smoke one of the differences between Leberwurst and Braunschweiger?
Google confirms that Braunschweiger is lightly smoked, Leberwurst is not smoked.

This place never disappoints when I go looking for an esoteric wine pairing. Moose Braunschweiger next weekend and I’ll pair it with a Zin and Riesling and see how it goes.
I will definitely try it together. As soon as I finish my 30 day diet that I found here. I have 10 days left to diet. In fact, it is not so difficult when you have a meal plan and you can not think about what to cook that is useful and nutritious. Maybe I will have a break for a few days, but I will start another diet soon
