No formal notes, but last night I opened up a bottle of 2010 Guillot and it’s in a really nice place - aromatically, moving towards tertiary with savory aromas becoming quite prominent yet still showing enough fruit/green to know it’s Baudry. Very well-rounded and integrated on the palate, the tannins so much more civilized. Reminded me of aged Bordeaux meets the Loire, tbh. Even better w/dinner.
Have to admit, in terms of accessibility, this wasn’t my favorite vintage of Guillot on release - glad I gave this one a bit of time in the cellar before revisiting and I’d guess it will continue drinking well over the next 5-10+ years before starting to decline (or many more if your cellar is on the chilly side, mine’s passive).
