Couldn’t agree more. I was actually going to post as one in the camp that cheese and wine don’t generally go well together (even some of the matches here might not work depending on the age of the cheese, the age/producer of the wine, etc.), but that I match them all the time. Our favorite dinner is 4-5 cheeses with some crackers, salumi, bread, and pâté and a couple bottles of wine. I choose the cheeses I like, the wines I like, and if they happen to be a great pairing, then great. Sometimes they are horrible together, in which case I don’t eat that cheese and then take a sip of wine (or vice versa). Cheese and wine are both too good…
Savagnin sous voile and Comté is the one the best wine and cheese pairing ever.
Others are good but I have yet to experience such symbiotic taste. I am all ears though !!
