Winemaking: Wild fermentation, 95% whole cluster, aged in neutral 225-228 liter French oak barriques for 20 months, no racking, no fining or filtering. 28ppm SO2 at bottling, Diam 10 closure.

Tasting Notes: The aromas, goosed by whole-cluster fermentation, are hauntingly savory, with scents of smoke, creosote, violets, sage, peppermint, iodine, sassafras, rosemary, lavender…it’s the sort of wine you could smell for days. This wine is nearly equal parts Grenache, Syrah and Mourvèdre, all coming from contiguous blocks within this vineyard. The aromas are brooding, with notes of smoked meat, lemon zest, black pepper, raspberry, sauvage and crushed herbs.
