best book on winemaking?

Any suggestions?

This was our textbook at Fresno State. It has the scientific explanations for everything, as well as a section on lab tests, etc.

And of course, probably the gold standard in winemaking books:

Two volumes, but very expensive. If it’s just home winemaking you are looking for, there is a lot of stuff out there. It depends on what you are trying to do.

A second for Wine Analysis and Production by Zoecklein, et al. Same “bible” we used up in Seattle. Still have a copy nearby.

I use both of those books previously mentioned… though I always referred to the Wine Analysis & Production as “the Fugelsang”

Knowing and making wine by Emile Peynaud.

Thanks Mike. Read the book and worked with Ray for 10days during the last harvest.

Want to learn more hence the search.

Thank you all for the suggestions.

This is the text we used at UC Davis this year. Using this now over the Boulton text.

When I was researching this very thing, I came up with this:

http://www.amazon.com/Winery-Technology-Operations-Handbook-Wineries/dp/0932664660

I use it strictly for home winemaking, but it is written from a commercial production standpoint.

Also, Making Good Wine by Bryce Rankine.

Thank you again for these suggestions.

Do any of you have any extra copy(long shot) or copies you don’t need anymore?

I got wine to trade for the books. Let me know.

+1

Also, for home winemaking (and everyday, non scientific language that beats some of the textbooks) I recommend…

No, they get used each vintage. The Oxford Dic by Jancis is good too for running ideas out to their end.
