Going to Cyrus in a couple weeks - suggestions on wine?

Hey all - I’m heading to Cyrus for a bday dinner in a couple of weeks and wanted to be a bit prepared ahead of time. I can see the menu, but not the pairings. Just in case the pairings are less than ideal, could you guys recommend a few half bottles off the list? Just 2 people heading to dinner.

On another note, has anyone had the full pairings - any thoughts? Thanks! [cheers.gif]

I suggest you try to find the best version of Commandaria (dessert wine) that you can find on the island.

Additionally, you may find this site of interest:

I’m sure he means Cyrus, a restaurant in Healdsburg.

This thread might be better placed in the epicurean forum.

Thanks for the thought - I’ll post on that board!

Current menu from the website above. Let the discussion reign supreme.

Eugene, let Chase guide you. He is an admirable Somm and a great teacher. He’ll listen well and most likely deliver something great if you are not thrilled with the tasting menu. Enjoy!

The staff is great over at Cyrus, and agree, trust that they would recommend a very good wine pairing! Having been there a few times now, brought a 2003 Screaming Eagle, 2003 Sine Qua Non Inaugural Syrah and a 1988 DRC Grands Echezeaux on three different occasions. Thought the DRC was best, something more delicate, elegant, and profound that went best with the delicate, elegant and profound food. The food really is exceptional, so suggest a special bottle, enjoy and oh, please tell us all about it!

Consider bringing a few bottles yourself and decide once you are there.

We ate at Cyrus about a month ago with Hardy Wallace, and he persuaded us to go with the tasting menu and the wine pairings. He was spot on!

Let me say that this was the best restaurant meal we’ve had in years, and the wine pairings were absolutely outstanding!

The wines were mostly European, including a very interesting Spatburgunder, and each went amazingly well with the food. IMHO the young sommelier is world class, very friendly and well spoken, and able to provide lots of info about the wines he presented.

As far as the menu goes, if a dish includes a soup or a broth, order it! They do some pretty amazing things with liquids at Cyrus.

First time post for me… Not ITB. My wife and I have been to Cyrus twice with the last time being about a month ago. We did the wine pairing each time and it was excellent. We found it to be a great way to be exposed to a variety of new wines that we probably never consider trying or pairing. The whole experience at Cyrus is amazing.

Did the wine pairing, too. We didn’t have a bottle to bring-that would have required forethought and planning- and were not disappointed. Great place…enjoy! [cheers.gif]

Thanks for the thoughts guys! I think I’ll aim for the wine pairing but bring a flexible wine just in case - perhaps a pinot or burgandy. Appreciate the help, and I’ll definitely post notes of the meal and winery visits when I get back!
