Pairing with liver

I’ve tried the Liver with Onions, Bacon and Sage from “Odd Bits” twice. Both were successful, the key was not overcooking the liver.

First time had with a 2017 Bedrock Papera, wine was good, but the pairing was so-so. Tried again this weekend with a 2020 St. Cosme Cotes du Rhone, much better with the dish. I think my takeaway was simpler wine with a simple, but weirder dish.
