We are bracing for what is supposed to be our biggest blast of wintery weather this season that hits us today. If you are in the same path of this icy and snowy storm I hope you are safely and warmly battened down! If you are further north or west and dealing with similar chronic weather conditions we hope the same for you and that you are not chuckling too hard at this statement!

Today’s wines are so much fun - not just to taste but to also sell! The wines are so good and always so interesting! If you are a fan of the DeMoor’s Chablis and have not had these wines yet, you will find a LOT to like!

Domaine Pattes Loup is one of the most exciting estates to emerge from Chablis in recent years (Pattes Loup means “wolf paws”). Thomas Pico started his tiny estate in Courgis in 2005, just outside of the village of Chablis, under the wings of his friends and fellow organic Chablisiens, Alice and Olivier de Moor. He inherited 2.4 hectares of vines from his family’s estate, which historically produced correct, but uninspiring wines. Motivated to take a qualitative leap in a new direction, and against the wishes of his father, Thomas immediately began a program of strict yield control and a conversion to organic viticulture.

Thomas Pico has established himself as a devoted organic grower in the fringe weather growing region of Chablis. Trying to be an organic grower here as little as 20 years ago was almost impossible. Thomas has developed a reputation as a maverick of sorts (our favorite kinds of winemakers!) and is known for keeping his wines on the lees for much longer than his fellow Chablis brethren and importantly tops off his barrels.

The Premier Cru Butteaux (from within Montmains) is from hillside vineyards between 30 and 55 years old, and are all raised in older oak. Pico’s organic and biodynamic farming practices and resulting wines are the essence of pure “Chablis”. Not only do they have chalky and briny minerality, there is a sense of vitality to the wines, and a textured density that can only come from dedicated work in the vineyards and transparent winemaking. His wines are concentrated and opulent, yet racy and intensely saline. If you are a Chablis fan you should try these to check in and see how the envelope is being pushed here in this tiny and most unique of appellations. Winemaking: Fermented with indigenous yeast. Up to 40% of the juice is fermented in concrete eggs with the balance in stainless steel. No oak.

Vineyard: 50 year old vines in the lieu-dit of Butteaux, south-facing, Kimmeridgian soils. Butteaux is a parcel within the larger 1er Montmains vineyard just like Forets.
Viticulture: Pico has a program of strict yield control and a commitment to organic Viticulture. He harvests everything by hand, with hand sorting of any imperfect berries at the winery on a vibrating table de trie.
Winemaking: Fermented with indigenous yeast in older oak barrels.
Aging: Aged in older oak barrels. Sulfur analysis: 29 mg/L total sulfur, 3 mg/L free sulfur.
