Silas is all about great small batch wine from Oregon made with organic and biodynamic grapes, picked early for acidity, spontaneous fermented, 14-18 months on lees, aged in bottle for 3-6 years (or until theyâre singing) before release. Yes, that 2017 is a current vintage. That 2016 as well. Our accountant, bless her soul, has mild panic attacks every year at tax time when we re-explain our business model. Something about ROI, delay, cost of goodsâŠsomething. This is the kind of wine we like to drink, so this is the kind of wine we make.
Pinot, of course, but also amazing Malbecs, Gamays, Rieslings and more. Old school, old world process. You should buy some. Itâs not like a lot of wine out there. I think youâll like it.
As for me, I get up every morning and do what I do because I am passionate about wine and the life I get to lead. I am not independently wealthy, this isnât a second trophy career after making it big, I donât have connections in the industry or wine writers on speed dial. Iâm an ex-chemist and standup comedian from NYC who opened a cafĂ© and wine bar in the East Village, fell in love with wine, moved out to Oregon and started from the ground up. Higher elevation and earlier picking (I pick on pH just as much as Brix) result in hot vintages that have all the weight and fruit power that one expects, while retaining the structure and brightness that comes with not letting the acidity disappear.
